Apple Balsamic Glazed Steak with Pan-Fried Potatoes and Green Beans

Ingredients

For the steak:

1/2 pound New York strip steak

Pinch black pepper

1 teaspoon Wildtree Roasted Garlic Grapeseed Oil

2 stalks fresh thyme

2 tablespoons red wine

1/2 tablespoon tamari

1 tablespoon water

2 tablespoons Wildtree Apple Balsamic Vinegar

1 teaspoon honey

1 tablespoon unsalted butter, chilled

 

For the vegetables:

2 medium gold potatoes, cut into 1/2-inch cubes

1 1/2 tablespoons Wildtree Roasted Garlic Grapeseed Oil

1 onion, sliced

1/4 teaspoon Wildtree Gourmet Sea Salt: BBQ

1/4 teaspoon black pepper

8 ounces green beans, ends trimmed

Not So Sloppy Sliders

Ingredients

1 ½ pounds ground beef

½ medium onion, finely diced

½ bell pepper, finely diced

1 teaspoon yellow mustard

3 tablespoons Wildtree Sloppy Joe Blend

3 tablespoons tomato paste

1 tablespoon brown sugar

12 slider buns

Method of Preparation

Combine all ingredients up to slider buns. Form meat mixture into 12 small patties. Grill to desired doneness. Serve burgers on slider buns with desired toppings.

Crustless Quiche

I love quiche, but since giving up wheat I have not made one, as I have yet to find a gluten free pie crust that tastes good.  Recently my friend Jane made me a crustless quiche, and it was so good, I couldn’t wait to make another.  She used sour cream instead of cream in hers, and I followed her lead.  Normally I use spinach in my quiche, but I didn’t have any on hand, so I used zucchini and was thrilled with the results!

Save $$$ Menu Planning with Publix Ad

Jerk Pork Tenderloin with Rosemary Sauce

It’s another “slow sale week” at Publix for the healthy shopper.  They do have tuna on sale, so I will definitely pick up some of that.  It is delicious with Wildtree Sweet & Spicy Thai Chili Sauce.  Simply pour the sauce over your tuna and bake to desired doneness.  I am using up the rest of the meatballs in my freezer for tonight’s Wildtree tasting, so I’ll make up another batch of those for the freezer this weekend.  The remaining meals will come from my freezer and / or pantry:

Friday:  Tuna, Quick Rice from the pantry and organic broccoli from last week’s Lakeland Organic delivery

Saturday:  Meatloaf (made with batch of meatballs I’ll make for the freezer Saturday morning), baked potatoes from Lakeland Organic and organic spinach from the freezer

Sunday:  Alex’s birthday party – yay!

Monday:  Pork Tenderloin with Sweet Potato Fries

Tuesday:  Chicken burgers (in the freezer from a freezer meal workshop) with zoodle salad

Wednesday:  Spaghetti & Meatballs

Thursday:  Veggie burgers from the pantry with a gluten free pasta salad

Zoodle Salad

I got the inspiration for this salad from my friend Barb, who brought a zoodle salad to Bunco last week.  I knew I had to create something yummy to replace spaghetti salad, and this sure fits the bill!  If you have never made zoodles, you must try it.  You feel so much healthier than eating pasta, and it is sooo easy.  This little tool is not expensive, and it works like a charm.  Takes less than five minutes to zoodle your zucchini, I promise.

3 zucchini – zoodled

3 organic fresh mushrooms, diced

1/4 cup chopped sundried tomatoes

2 tablespoons pine nuts

1/4 cup goat cheese crumbles

Wildtree Basil Pesto Grapeseed Oil

Wildtree Apple Balsamic Vinegar

After you zoodle the zucchini, cut it into bit size pieces to make it easier to eat.  Add the remaining ingredients and drizzle with the grapeseed oil and balsamic vinegar.  Done!

Last night I had a ripe mango from Lakeland Organic that I needed to eat, so I had me some salmon with the mango and this yummy salad.  Delish and I felt so good for eating it!  Shalom!

Save $$$ Menu Planning with the Weekly Publix Ad

This is an unusual week – looking at the Publix ad, there is literally nothing I can use.  But that’s okay, because when they had good deals in recent weeks I did the “prep once, eat twice” routine, so I have plenty in my freezer from previous weeks.

I also have extra meatballs in the freezer from the big batch I made on Sunday for tonight’s Bunco party.  I have four dozen in the crockpot ready for tonight’s gathering, but that still leaves me with another two dozen in the freezer for another meal.  I also enjoyed a meatloaf earlier in the week from the same batch – definitely worth the 45 minutes spent to prep last weekend!
