Jerk Pork Tenderloin with Rosemary Sauce

It’s another “slow sale week” at Publix for the healthy shopper.  They do have tuna on sale, so I will definitely pick up some of that.  It is delicious with Wildtree Sweet & Spicy Thai Chili Sauce.  Simply pour the sauce over your tuna and bake to desired doneness.  I am using up the rest of the meatballs in my freezer for tonight’s Wildtree tasting, so I’ll make up another batch of those for the freezer this weekend.  The remaining meals will come from my freezer and / or pantry:

Friday:  Tuna, Quick Rice from the pantry and organic broccoli from last week’s Lakeland Organic delivery

Saturday:  Meatloaf (made with batch of meatballs I’ll make for the freezer Saturday morning), baked potatoes from Lakeland Organic and organic spinach from the freezer

Sunday:  Alex’s birthday party – yay!

Monday:  Pork Tenderloin with Sweet Potato Fries

Tuesday:  Chicken burgers (in the freezer from a freezer meal workshop) with zoodle salad

Wednesday:  Spaghetti & Meatballs

Thursday:  Veggie burgers from the pantry with a gluten free pasta salad

Organic sweet potatoes, peeled and cut into fries

Wildtree Natural Grapeseed Oil

Wildtree Jamaican Jerk Seasoning

Preheat oven to 400 degrees.  Line baking sheet with foil for easy cleanup and spray with non-stick spray (I use grapeseed oil in a pump.  You can also find organic oils in sprays today.) Spread fries on the prepared baking sheet.  Drizzle with grapeseed oil and sprinkle with Jamaican Jerk Seasoning.  Bake at 400 degrees for 40 minutes, or until tender.

These are great with pork!

Jerk Pork Tenderloin with Rosemary Sauce

Jambalaya

Jambalaya 2Aidells Cajun Sausage, sliced thin

1/2 large onion, diced

1 green pepper, diced

1 garlic clove, grated

 

Saute above in 2 tablespoons of Wildtree garlic grapeseed oil until vegetables are tender.  Then add:

15 1/2 oz can diced tomatoes

6 oz can tomato paste

8 oz can tomato sauce

1/2 cup water

Juice of 2 limes

1/2 teaspoon Wildtree Cajun Seasoning

2 teaspoons Wildtree Jamaican Jerk Blend

Salt to taste

Simmer about 15 minutes.  Serve over rice, top with cheese (I like goat cheese!) and enjoy!

Wildtree Sweet & Spicy Thai Chili Sauce

Sprinkle Wildtree Jamaican Jerk Seasoning over catfish filets after placing them in greased baking dish.  Bake at 375 degrees for 20-30 minutes, depending on size and thickness of filet.  For mango salsa, peel and dice mango, and mix with 1-2 tablespoons Wildtree Sweet & Spicy Thai Chili Sauce.  Serve mango salsa with catfish.
