This week I had my friend Jane over to try some Wildtree favorites.  Jane is actually responsible for getting me on the organic bandwagon over two years ago.  She is much better than I am with her clean eating (I am a work in progress!), so I wanted her knowledgeable opinion about the products.  I was thrilled to get much positive feedback about the quality of the ingredients and the taste, and after an enjoyable time eating healthy veggie burgers and organic rice, I am afraid I did get her to eat this Very Berry Cheesecake.   Continue reading “Gluten Free Very Berry Cheesecake”

These last couple of weeks the savings in the Publix ad haven’t been as substantial as they normally are, but I am still able to find some savings to use in my menu planning!  This week’s menu:

Spice Blend of the Week: Dill Dip Blend

Dill Dip Blend

Dill Dip Blend is not just for dip!  While it makes an absolutely delicious dill dip that everyone I have given it to loves, it is very versatile and delicious in most anything you like to use dill in.

Potato Salad

Potato-Salad-Recipe

Boil for 15 minutes:  8 large organic potatoes, peeled & diced

Add to cooled potatoes:

3 stalks organic celery, diced

1 green pepper, diced

1 small organic onion, diced

Dill pickles, diced

Combine and add to potatoes:

2 cups mayonaise

4 tablespoons Wildtree Apple Balsamic Vinegar

1 tablespoon Wildtree Garlic & Herb Blend

1 tablespoon Wildtree Dill Dip Blend

Sea Salt to taste

It is important to use organic potatoes.  Root vegetables are one of the most harmful when conventionally grown, as they absorb all of the run-off pesticides as they lay there in the ground.

Grilled Salmon with Creamy Cucumber Dill Sauce

Grilled salmon with creamy cucumber dill sauce

 

2 (3/4 pound) salmon fillets

1 tablespoon Wildtree Rancher Steak Rub

1 tablespoon Wildtree Roasted Garlic Grapeseed Oil

1/2 cup light sour cream

2 tablespoons Wildtree Dill Dip Blend

1 teaspoon lemon juice

1/4 cup diced cucumber

In a large bowl, mix together sour cream, Dill Dip Blend, lemon juice, and cucumber. Refrigerate until ready to serve. Preheat grill over medium-high heat and grease the grill grates. Coat salmon fillets with Rancher Steak Rub and Roasted Garlic Grapeseed Oil. Place salmon directly on the grill, meat side down. Grill for 5 minutes, flip, and cook an additional 5 minutes until the salmon is cooked through:145°F. Serve salmon with creamy cucumber dill sauce and any sides of your choice.

Saving $$$ – Menu Planning with the Publix Ad

I am trying to do better with using the weekly sales at Publix to do my menu planning.  I have decided that I will probably do better at it if I look at it as a way to help others, so here is my menu plan based on this week’s ad, which includes the following sale items:

  • Greenwise Chicken Breast
  • Greenwise Chicken Sausage
  • Sockeye Salmon

Other Items I’ll use this week from the Publix ad:

  • Barilla Pasta (BOGO)
  • DelMonte Gold Fresh Pineapple
  • Mango
  • Organic Strawberries

A couple of notes:

I am going to use the chicken sausage in the jambalaya recipe instead of andouille sausage.  With regard to salmon, no matter how much I have researched / read, farm raised salmon is not a healthy choice, no matter what way you cut the cake, so to speak.  Therefore, I am sticking with wild salmon from now on.  Note that pineapple and mango are considered a safer choice than other options, like strawberries, which is why I am purchasing the pineapple and mango that are grown using conventional methods.  (I realize there are still environmental concerns, but you do what you can.)
